Cranberry Relish
Recipe Type: Relish
Ingredients
- juice of one orange or 1/2 cup orange juice
- 1 cup red onion
- 2 cups cranberries
- zest of one orange
- 1/4 cup brown sugar
- 1 tsp pickled ginger finely diced
- 2 tsp. maple sugar
- 1/4 tsp dark soy sauce
- 1/2 tsp salt
- 1/4 tsp pepper to taste
- 1/8 tsp cayenne powder
- 3 tsps honey
- 1/2 Tbl fresh fennel fronds freshly diced
- dash of all spice ground with mortar
- 1 tsp of geletin
- 1/2 tsp of ACV
- 1/2 Tbl butter
- 2 tsp olive oil
Instructions
- Carmelize onions, cranberries, sugar, and spices
- Cook until cranberry seeds come out, skins are softening
- Boil 5-10 mins on med heat, adding geletin for the last 3 mins and fronds for last min
- Cool down in a form
