Thanksgiving 2015.

Cranberry Relish
Recipe Type: Relish
Ingredients
  • juice of one orange or 1/2 cup orange juice
  • 1 cup red onion
  • 2 cups cranberries
  • zest of one orange
  • 1/4 cup brown sugar
  • 1 tsp pickled ginger finely diced
  • 2 tsp. maple sugar
  • 1/4 tsp dark soy sauce
  • 1/2 tsp salt
  • 1/4 tsp pepper to taste
  • 1/8 tsp cayenne powder
  • 3 tsps honey
  • 1/2 Tbl fresh fennel fronds freshly diced
  • dash of all spice ground with mortar
  • 1 tsp of geletin
  • 1/2 tsp of ACV
  • 1/2 Tbl butter
  • 2 tsp olive oil
Instructions
  1. Carmelize onions, cranberries, sugar, and spices
  2. Cook until cranberry seeds come out, skins are softening
  3. Boil 5-10 mins on med heat, adding geletin for the last 3 mins and fronds for last min
  4. Cool down in a form

Grant made an awesome cranberry relish for Thanksgiving.
