IMG_3988What to do with radishes?? We suddenly have a lot of radishes to do something with. We decided to cook the greens as well as the bulbs this year.  The radish greens are surprisingly good! We have sauteed the greens with olive oil, fennel seed, kosher salt, and black pepper. I also cooked them with some bacon and other greens (red mustard, collards, and spinach). We have been baking the radish bulbs with carrots, olive oil garlic powder, and sometimes yellow onion. We have also been slicing the bulbs and adding them to salads.

We have been eating a lot of radishes.  Radishes are high in fiber, vitamin C, folate, vitamin B-6, and potassium.  They are a good source of anti-oxidants.  They are low in calories and are low on the glycemic index.

Radishes seem to grow well and quickly. I planted them together with carrots this spring. I planted the radishes in between the rows of carrots. The radishes did well. They actually took over the planter. The carrots didn’t come up. I definitely want to plant some more radishes but in their own spot. I don’t think I would plant them in between something else again.   I think radishes are something to potentially have going all season.  Especially now that we know to enjoy eating the entire plant.

I would definitely eat them before the plant starts to flower.  We tried to eat the last few after the plants had flowered and the radishes were starting to get a little tough. We baked them that night, but unfortunetly they ended up in the compost bin. I’m ready to plant more. (I pulled the rest of the crop out of the planter and composted them the morning after that dinner)  Gotta love a hardy fast growing nutritious crop!
